Christmas Cupcakes


These are some cupcakes my little sis made at chrimbo for her class party. They're basic butter cakes, and peppermint butter icing with choccy santas and coconut on top. They were yummy scrumboes as well!

How to mess up cupcakes...

I was in the kitchen today, making cupcakes, and I decided to decorate them with little green and blue piped flowers. But when I piped the flowers on, they resembled a giant lump of nothing more than flowers. So I decided to mix the green icing with the buttercream that was already on the cupcake and just put little funny Dr. Seuss-like blobs on the top. The photography makes the cakes look better than they actually are, trust me. But I thought I'd post these pictures anyway because I'm bored and have nothing else to do :)

If You Could Be A Cupcake...

So I was doing some thinking the other day, about nothing in paticular, and a random thought popped into my head! I thought that if I were a cupcake, I would be a naaaice choccy cupcake with chocolate icing and m&m's on top. So, I pose the question to you today, if you were a cupcake, what flavour would you be, what icing/decorations would you have and why?

Flower Cupcakes


These are cupcakes that I made last year, before I discovered the art of fanciful photography, but they still look okay nonetheless. They're just basic butter cupcakes with butter icing, but the way I made the flowers is really cool.

So I was at a local market one day, and I discovered this stall with all these little icing decorations all over the table. When I went up to the stall, I discovered that the lady wasn't selling the decorations, but the silicone moulds to make the decorations. So my mum got me one, and it's the most helpful little tool ever.

You just buy some soft fondant icing, colour it as normal, and then coat it in some cornflour. Then you press it into the mould, smooth out the top and pop it out. Yay! A flower!

Easter Cupcakes

Ok, so I know Easter was ages ago, but I just have to show off these cupcakes. Believe me, they weren't the quickest or the easiest cupcakes I've ever made. But my family loved them and they went like hotcakes. Enjoy!They're basically just a chocolate cupcake with chocolate icing, and then chocolate nests with little speckled eggs in them.


Here's the recipe:

EASTER CAKES

Ingredients
Cake
3 eggs
3/4 cup softened butter
3/4 cup caster sugar
1/2 cup milk
1 1/2 cups self raising flour, sifted
1 tsp vanilla extract
200g milk choc chips
2 - 3 tbsp cocoa powder

Method
Cake
Preheat a non-fanforced oven to 160°C. Place cupcake papers (foil or plain, although foil looks more presentable) in a 12-cupcake ovensafe pan. Using electric mixers, beat the eggs, add the butter and the sugar, and mix with the beaters until light and fluffy.
Add the milk, the vanilla essence, and the sifted flour, and beat to combine. Add choc chips and cocoa powder, and beat with electric mixers once again until lumps are removed and mixture is light and creamy.
Pour mixture into papers, and cook in oven for 20 minutes. It's important not to open the oven door while cooking, otherwise muffins go lopsided.
Take muffins out of the oven and decorate.
